A traceability analysis is given for each business in the game supply chain from restaurant back to the hunter. This is used to illustrate how each type of business establishes traceability and keeps records, and how this can be used to identify and trace the source of the game meet eaten by the diners at the restaurant.


In this scenario the supply chain consists of a number of stages in sequence, from the hunter of the wild game, through the game handling establishment and the on-line butcher to the restaurant serving the game meat to the diners.

The focus is on traceability based on the one step back and one step forward approach by each food business in the supply chain, hunter to restaurant. The analysis involves identifying the details of the identification read, the information recorded and the identification applied at each process step that might be used to establish traceability.

One step back gives details of the materials received into the business. In this case study the hunter, the game handling business, the on-line butcher and the restaurant.

The one step forward gives details of the product supplied to another business. In this case study the hunter, game handling business and on-line butcher. The restaurant (retailer) is serving the game meet to the end consumer and not another business.
